Born in the heart of Ontario’s cottage country, our small-batch condiment company is dedicated to the ancient art of fermentation and the modern pursuit of unforgettable flavor. We specialize in fermented hot sauces and bold, crave-worthy BBQ sauce, handcrafted in Muskoka with patience, passion, and just the right amount of fire.

What began as a passing curiosity about fermentation — a chef’s professional itch to understand what exactly was happening inside a bubbling jar — quickly escalated into a full-blown, joyfully unhinged obsession.

While managing a local restaurant, Chef Martin started developing his own fermented condiments, initially as a creative experiment. That experiment turned into years of relentless tinkering. He pushed flavor boundaries with reckless optimism: unlikely pairings, bold heat levels, and techniques borrowed from the craft beer world — because if brewers could coax magic from microbes, why couldn’t a chef? The answer, it turned out, was that he absolutely could.

When he eventually left the restaurant, the fermentation fixation didn’t pack up and go with it. It followed him home. Small-batch trials took over his kitchen. Airlocks and jars multiplied. Friends became taste-testers. And in perhaps the most telling sign that this was no mere hobby, he hand-crafted miniature fermented hot sauces as wedding favors for his own wedding.

Normal people give candles. Martin gave fermented condiments.

The response was immediate and enthusiastic. Guests didn’t just compliment the favors — they demanded refills. They insisted he start selling. They told him, quite plainly, that this was a business waiting to happen.

And so, Muskoka Wild Brine was born.

Leading the charge was the now-iconic Fresno Chili & Garlic Hot Sauce — a bold, fermented expression of heat, depth, and just enough wildness to keep you coming back for another bite. It wasn’t just the flagship sauce.

It was the spark that turned obsession into enterprise.

At Muskoka Wild Brine, fermentation isn’t just a process for us — it’s a philosophy. It’s about letting nature work its magic, developing deep complexity, and creating sauces that don’t just sit on your food… they transform it.

 

What truly sets us apart is where our flavor begins.

All of the produce used in our sauces is custom grown for us by Spruce Ridge Farm in Rodney, Ontario. Every pepper, every vegetable, every ingredient that brings our sauces to life is grown right here in Ontario — carefully cultivated, harvested at peak flavor, and fermented with intention.
